1.Choca- Mocha Cupcakes Cupcake-Heaven
3 oz Bittersweet chocolate chopped
10 tablespoons unsalted butter
3/4 cup granulated sugar
2 eggs
2 tb cocoa powder
3/4 cup self- rising flour
2 tb instant coffee dissolved in 1 tb boiling water
1/4 cup coffee beans
To decorate
7 bs unsalted butter
1 2/3 cups confectioners sugar
2tb instant coffee dissolved 1 tb boiling water
bittersweet chocolate , grated
Preheat the oven to 350 F
Melted chocolate in the heatproof bowl.Beat the butter ,sugar until pale and fluffy,beat in the eggs one at a time.Stir in the melted chocolate and coca powder.Sift the flour into the mixture and stir in the stir in the coffee , followed by the coffee beans.
Spoon the mixture into the paper liners. Bake about 20 minutes.
To decorate , beat the butter , sugar, coffee together in a bowl.Spread the mixture over the cupcakes.

1 stick unsalted butter
½ cup granulated sugar
2 eggs
1cup self-rising flour
Finely grate orange
1ts poppy seeds
To decorate
2 oranges
8oz. mascarpone
½ cup confectioners’ sugar
Preheat the oven to 350 F
Beat the butter , sugar in a bowl until fluffy, then beat tin the eggs one at a time. Sift the flour the mixture and fold in , then stir the orange peel and poppy seeds.
Spoon the mixture into the paper liners bake in the preheated oven for about 18 min.
