It is nothing like the smell of the freshly baked bread on Sunday morning. The entire house smells like home which makes us very happy. It is delicious eaten very fresh still bit warm with lashing of butter, homemade raspberry jam and of course a glass of milk.
450g all purpose flour
5 tsp baking soda
1 ½ tsb cream of tartar
Pinch of salt
2 tbsp butter
1 egg whisked with 300 ml buttermilk (karnemelek)
Preheat the oven 220 °C and grease a baking sheet about 30 minutes.
1.Sift the dry ingredients into a big bowl. Cut in the butter and rub into the flour until the mixture resembles fine breadcrumbs.
2.Make a well in the center and pour in the egg and buttermilk mixture. Mix thoroughly to make a soft dough.
3.Turn out on to floured board and knead light for a minute or two. Shape into a round and flatten slightly. Place the loaf on the baking sheet and make with a deep cross to help it to cook evenly ”to let the angels out”.
