Easy Eggs Florentine with Baby Spinach and Goat Cheese

Vanilla Butter cream Cupcakes Source 

Preheat the oven to 18O°C Bake for 18 minutes until risen and gold.

1 stick unsalted butter
½ cup granulated sugar
1 cup self –rising flour
1teaspoon pure vanilla extract
2 tablespoon milk

To decorate

6 tablespoon unsalted butter
1 ¾ cups confectioners’ sugar
Yellow food coloring
Sprinkles

Beat the butter and sugar together until fluffy, then beat in the eggs one at the a time. Sift the flour into the mixture and fold in, then stir in the vanilla extract and milk.

To decorate the cupcakes, put the butter in the bowl and beat until smooth and creamy. Add the sugar, milk, and vanilla extract, and food coloring and stir until well mixed.
